(9) A previously fermented or fermenting meat must not be used as —
(a) a starter culture; or
(b) an ingredient in a UCFM.
(10) Meat and batter mix used in the preparation of a UCFM must, if stored by the manufacturer, be stored at 5°C or below prior to fermentation.
(11) The pH of a fermenting UCFM must be measured in accordance with Method 1 in the Schedule.

1 Meat Determination of pH.
Mince a representative portion of the sample of the UCFM and place that portion in a stoppered bottle with twice its weight of water. Shake at five minute intervals for 30 minutes and determine the pH value of the liquid electrometrically at 20°C.
Alternatively, the pH can be determined through the use of calibrated, direct-contact pH probes or meters.

Order of the Nursing Council in Disciplinary Session in Respect of Lisa Jane Kennedy, Registered Comprehensive Nurse
Pursuant to sections 42 (1) (a), 42 (2) (a), 42 (3), 42 (9) and 48A of the Nurses Act 1977, the Nursing Council of New Zealand (“the council”) in a decision dated 14 February 2003, ordered that the name Lisa Jane Kennedy be removed from the Register of Comprehensive Nurses.
This followed conviction in the Invercargill District Court of stealing Class C controlled drugs, pursuant to section 11 (1) (a) of the Misuse of Drugs Act 1975.
Lisa Jane Kennedy was sentenced to 12 months’ supervision by the Court.
In exercising its disciplinary powers, the council also ordered that Lisa Jane Kennedy may apply for reinstatement to the Register after two years, that Lisa Jane Kennedy pay $350.00 costs, that a notice stating the effect of the orders be published in the New Zealand Gazette, Kai Tiaki: Nursing New Zealand, the PSA Journal, the council’s newsletter and made available to accredited members of the media, and that she return to the Registrar all certificates and badges issued to her under the Nurses Act 1977.
