meat is sold: they shall be placed in watertight metal receptacles suitably covered to prevent access by rats and flies. Such receptacles shall be removed from the premises and emptied sufficiently frequently to prevent any nuisance arising from the contents, and they shall be kept clean.

(g.) Tables and benches on which meat is exposed for sale shall be constructed of non-absorbent smooth material.

(h.) Every person who is in charge of a place in which meat is stored or offered for retail sale shall keep such place so far as practicable free from rats, mice, and flies.

(i.) Meat offered for retail sale shall be protected from flies and dust.

(j.) The sale of meat which has been “blown” or “spouted” is hereby prohibited.

(k.) Every person engaged in the handling of meat for sale shall wear clean washable overclothing while so engaged, and when handling carcasses shall take measures to prevent such carcases from coming in direct contact with his head and neck.

Transport of Meat and Fish.

  1. (1.) No person shall use for the conveyance of meat or fish for sale any vehicle or receptacle which is not so constructed as to be easily cleansed, or which is used for the conveyance of any article liable to taint or contaminate the meat or fish.

(2.) No person shall convey or deliver, or cause to be conveyed or delivered, any meat for sale unless such meat whilst being conveyed or delivered is kept so covered and enclosed as to be protected from dust, flies, and impurities.

(3.) No person shall during the transport or delivery for sale for human consumption of any carcase or portion of a carcase of a mammal deposit such carcase or portion of a carcase upon any roadway or wharf or railway-platform, or on the floor of any railway-wagon, or on the deck of any vessel, or on any like surface open to traffic, unless such carcase or portion of a carcase is enclosed in a clean receptacle or cover. Carcases or portions of carcases of mammals not so enclosed shall be so suspended during transit that no portion shall rest on any such roadway, wharf, platform, floor, deck, or surface.

(4.) No person shall sell any meat so packed that it can come in contact with paper or other material that is not clean, or with any writing on any paper or material.

(5.) All receptacles in which fish are contained, packed, or consigned for sale shall be thoroughly cleansed by or on behalf of the consignee of such fish immediately the fish are removed from the receptacle.

(6.) No person shall pack fish for sale in any receptacle which is not clean.

FOR SECURING CLEANLINESS AND FREEDOM FROM CONTAMINATION OF MILK.

Milk-shops and Milk-stores.

  1. (1.) No person shall erect or use any premises for the retail sale, or for the storage, or exposure for retail sale, of milk unless he has obtained permission in writing from the local authority, subject to such conditions as to license as the local authority may by by-law prescribe.

(2.) No person shall erect or use any building for the separation, pasteurization, or other process of preparation of milk for retail sale, or for the storage of milk for retail sale, unless the building complies with the provisions of clause 5 of these regulations.

(3.) No person shall use any place or room for the treatment or storage of milk for retail sale unless such place or room complies with the following provisions, that is to say:—

(a.) The floors shall be constructed of cement concrete or other impervious material, finished with a smooth surface, and so graded as to carry all fluids spilt thereon to discharge in the open air.

(b.) The internal surface of the walls shall be lined and finished with an even surface of tiles, cement, or other material impervious to water, and shall at all times be kept clean either by washing with water or by calcimining from time to time.
