(d.) Ovens shall be so constructed or cased as to prevent the
accumulation of dust or rubbish on the top thereof.
(e.) Suitable drainage for the removal of waste water shall be
provided, and all drains, sanitary appliances, and sanitary
fittings shall be in accordance with the by-laws as to drainage
and plumbing of the local authority, or, in the absence of
such by-laws, then to the satisfaction of an Inspector of
Health.
(f.) Adequate provision shall be made by means of sinks and
other sanitary fittings for the cleansing of appliances, and
ablation-basins shall be provided for the use of persons
employed in and about the bakehouse. An adequate
supply of cold and hot water shall be provided for use in
such sinks, fittings, and ablation-basins.
(g.) In every yard, pathway, and cartway used in connection
with the bakehouse such area as may be indicated by
by-law, or, in the absence of such by-law, by an Inspector
of Health, shall be provided with a covering of macadam,
concrete, asphalt, or other hard even surface suitably
graded and drained.

Precautions to be observed in Bakehouses.

(5.) In addition to complying with the duties prescribed in clauses
4 and 7 of these regulations in so far as they apply to bakehouses,
no person shall bake or prepare for baking any bread or pastry or
article of food for sale unless in compliance with each of the following
provisions, that is to say :β€”
(a.) The floors and internal surfaces of the walls and ceilings or
roofs in every part of the bakehouse shall be kept clean
and in good repair.
(b.) Every appliance used in the preparing and baking of food
shall be effectively cleansed after use, and troughs, tubs,
and containers shall be rinsed with boiling water, and so
covered or placed as to prevent dust or dirt accumulating
therein while not in use.
(c.) Cupboards, trays, and shelves in which food is stored shall
be washed frequently so as to be clean and free from debris.
(d.) Troughs and bins, if fixed, shall be built in to the wall and
floor so as to leave no space behind or below the trough or
bin, and if movable shall be provided with wheels to
facilitate cleansing. Furniture and machinery if fixed
shall be so placed and fitted as to leave no spaces below
or at the sides or back which are not readily inspected and
cleansed.
(e.) Troughs, containers, or other vessels which are cracked or
broken, or which have rough rusted or uneven surfaces or
edges, shall not be used to hold food.
(f.) Flour and other food shall be stored so as to be protected
from dust, vermin, and insects.
(g.) Every person while engaged in baking or preparing food for
baking shall wear clean overclothing.
(h.) No person shall smoke or chew tobacco while engaged in
baking or preparing food for baking, and no person shall
smoke or spit or urinate in any bakehouse.
(i.) Every person owning or managing a bakehouse or food-store
in connection with a bakehouse shall take measures to
keep such bakehouse or food-store free from rats and mice
to the satisfaction of an officer appointed by the local
authority.
(j.) Empty boxes, tins, sacks, clothes, boots, and the like articles
not required for immediate use shall not be kept in any
room in which food is prepared or baked or stored.
(k.) Sweepings, ashes, and rubbish shall be removed daily from
every bakehouse or storeroom.
(l.) Every yard and passage-way on premises used as a bakehouse
shall be kept clean and free from accumulation of boxes,
tins, rubbish, and any material which may offer harbourage
for rats, or which is, or may become, offensive.

Sale and Conveyance of Bread and Pastry.

(6.) No person shall sell, or deliver or cause to be delivered for
sale, any bread or pastry otherwise than in compliance with the
following provisions, that is to say :β€”
(a.) Every person who sells or delivers for sale any bread or pastry
shall comply with the provisions of clause 4 of these regulations.
