NOTE.—Bacon-curing was carried on at 37 establishments not connected with dairy factories, having 137 hands employed. 1,091 tons of bacon and hams were cured in 1885, valued at £58,087; other produce, £712. The approximate value of land and buildings was £24,364, and of plant, £2,435.
